Vegan Pasta with Tomato Sauce & Mushrooms


This pasta recipe is super simple and perfect for a quick and healthy weeknight dinner when you don't want to cook a heavy meal. Feel free to add in different vegetables and flavours to switch things up a bit, enjoy!

Ingredients:
  • pasta of your choice - i used wholewheat spaghetti
  • dash of oil
  • handful of mushrooms, sliced
  • tomato sauce - i used this one but you could make your own using chopped tomatoes, basil, oregano and garlic

Recipe:
  • cook pasta according to instructions on packet
  • whilst the pasta is cooking, add a little oil to a work/frying pan
  • saute the mushrooms in the wok/frying pan until starting to brown
  • add tomato sauce to the mushrooms and cook for around 5 minutes, until the mushrooms and sauce are cooked through
  • once cooked, drain pasta and serve together with the sauce & mushrooms
  • enjoy!
